Make-Ahead Breakfast Burritos

Built on a Sunday afternoon, eaten on a Tuesday morning with thirty seconds of effort — exactly what the first weeks of school call for.

The first two weeks of a new school year expose exactly how much a household's morning depended on summer's slack. There's no slack anymore — just a bus that leaves on time whether or not anyone's eaten. This is the fix: a batch of burritos built once, on a slow Sunday, that turn a rushed Tuesday morning into a thirty-second reheat.

The base comes from Thriving Home's freezer breakfast burritos, a meal-prep staple built specifically to survive the freezer and come back out tasting like it was made that morning. We adapted it for a household running on school-morning time — swapping in turkey sausage for a lighter protein, folding in spinach for the kids who won't eat a vegetable any other way, and offering a whole-wheat tortilla option for anyone watching refined carbs. The eggs, cheese, and assembly method stay close to the original, because that part was already right.

Ingredients

  • 8 large flour tortillas (10″), or whole-wheat tortillas
  • 10 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt, 1/4 tsp black pepper
  • 1 tbsp butter
  • 1 lb turkey breakfast sausage, casings removed
  • 2 cups frozen diced potatoes (or hash browns)
  • 2 cups fresh baby spinach, roughly chopped
  • 1 1/2 cups shredded Mexican-blend or cheddar cheese
  • Optional: diced bell pepper, salsa, hot sauce for serving

Steps

  1. Preheat oven to 400°F. Spread the frozen diced potatoes on a sheet pan and roast 20–25 minutes, stirring once, until browned and tender.
  2. While the potatoes roast, brown the turkey sausage in a large skillet over medium heat, breaking it into crumbles, about 8 minutes. Remove to a bowl and wipe out the skillet.
  3. In the same skillet, melt the butter over medium-low heat. Whisk the eggs, milk, salt, and pepper together, pour into the skillet, and scramble gently until just set but still moist. Fold in the chopped spinach for the last 30 seconds — the residual heat wilts it.
  4. Lay each tortilla flat. Divide the eggs, sausage, roasted potatoes, and cheese evenly among the 8 tortillas, placing the filling just off-center.
  5. Fold the two sides in, then roll from the bottom up, tucking as you go, until each burrito is sealed. Wrap tightly in foil or parchment.
  6. Freeze the wrapped burritos flat in a single layer for 2 hours, then transfer to a labeled freezer bag. They'll keep well for up to 3 months.
  7. To reheat: unwrap, wrap in a damp paper towel, and microwave 2–3 minutes from frozen, or bake at 350°F for 30–35 minutes if reheating from frozen in the oven.

Notes & Tips

Make-Ahead: This whole batch is designed to be made-ahead — a Sunday-afternoon project that pays off all week. Double it if the freezer has room; the burritos hold their texture well past the two-week mark.

Substitutions: Swap turkey sausage for black beans and extra cheese for a meatless version, or use egg whites in place of half the whole eggs for a lighter option. Any melting cheese works in place of the Mexican blend.

Vegetarian Variation: Omit the sausage, add 1 cup black beans and a diced bell pepper sautéed with the potatoes for texture and flavor.
