Brown Butter Pumpkin Chocolate Chip Cookie Bars

Somewhere between a brownie and a cookie, with just enough cream cheese drizzle to make it feel finished.

There's a specific texture fall baking is always chasing — not quite a cookie, not quite a brownie, somewhere gooey-adjacent in between — and pumpkin, of all ingredients, turns out to be the thing that gets you there. These bars lean into that "brookie" territory on purpose: browned butter for depth, blotted pumpkin so the crumb stays chewy instead of cakey, and a cream cheese drizzle on top that turns a sheet-pan bar into something that looks like it took more effort than it did.

Ingredients

  • 1 cup unsalted butter
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice
  • 1 tsp salt
  • ⅔ cup pumpkin puree (100% pure, not pie filling)
  • 1 cup granulated sugar
  • ¼ cup packed brown sugar
  • ¼ cup pure maple syrup
  • 1 large egg yolk
  • 2 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped toasted pecans
  • 4 oz cream cheese, softened (for the drizzle)
  • ¾ cup powdered sugar (for the drizzle)
  • 2–3 tsp milk (for the drizzle)

Instructions

  1. Brown the butter in a skillet over medium heat, stirring constantly until it foams, then turns golden and smells nutty, about 4–5 minutes. Pour into a large mixing bowl and cool 15 minutes.
  2. Preheat the oven to 325°F. Line a 9x13-inch pan with parchment, leaving overhang on two sides.
  3. In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, allspice, and salt.
  4. Blot the pumpkin puree between paper towels to remove excess moisture — this is the step that keeps the bars chewy instead of cakey.
  5. Into the cooled brown butter, whisk the granulated sugar, brown sugar, maple syrup, blotted pumpkin, egg yolk, and vanilla until smooth.
  6. Fold the dry ingredients into the wet ingredients with a spatula until just combined. Fold in the chocolate chips, reserving a small handful for the top.
  7. Press the dough evenly into the prepared pan. Scatter the reserved chocolate chips and the chopped pecans over the top.
  8. Bake 22–25 minutes, until the edges are set and a toothpick in the center comes out clean or with a few moist crumbs. Cool completely in the pan, about 30 minutes.
  9. Whisk the cream cheese, powdered sugar, and milk until smooth and drizzle over the cooled bars before slicing into squares.

Notes & Tips

Slightly underbaking is the move — the bars keep cooking a little from residual heat as they cool in the pan, and pulling them a touch early is what keeps the center from turning cakey. Use canned pumpkin puree only, not pumpkin pie filling, which contains added sugar and spice that will throw off the balance here.

Make-Ahead

These bars keep well at room temperature in an airtight container for up to three days, or in the fridge for up to a week once the cream cheese drizzle is added. They also freeze well undrizzled — wrap tightly and freeze up to a month, then thaw and add the drizzle fresh.

Substitutions

For a dairy-free version, swap the butter for a plant-based baking stick, use dairy-free chocolate chips, and skip the cream cheese drizzle in favor of a dusting of powdered sugar. A 1:1 gluten-free flour blend works in place of all-purpose flour, though the texture will land slightly denser.
